Bóc tỏi, để lại 2 tép để phi dầu cho thơm, còn lại băm nhỏ. Lòng gà rửa sạch, cắt thành miếng vì hay bị dính chùm.
Lấy phần tỏi băm bỏ vào tô thịt đã rửa sạch, thêm chút muối, đường trộn đều tay. Sau đó cho thêm nước mắm và để một chút cho thịt thấm.
Phi dầu với tỏi, sau khi dầu sôi thì bỏ phần mề vô trước vì mề cứng và chín lâu hơn.
Trở mề lại khi mặt trước vừa chín vàng. Bỏ phần còn lại (tim, gan...) vào chảo, nhẹ tay vì còn những phần khá mềm. Đun trên lửa và đảo mặt cho chín đều. Chờ 10-15 phút đến khi bớt nước thịt, bớt dầu là có thể dọn ra đĩa.
Dọn ra đĩa, có thêm một chút tiêu hoặc vài cọng rau hoặc xếp cà chua xung quanh cho đẹp tùy thích. Chúc bạn ngon miệng!
